Nick is one of my favorite bartenders in the world. He used to tend at Mattei's Tavern in Los Olivos but has relocated to Palo Alto to help open his sister's new restaurant, Bird Dog. He inspired what I proudly call The Porter.
Mix in a martini shaker
a handful of ice
a jigger of bourbon
a splash of agave or honey
the juice from a wedge lemon
Shake vigorously (the drink, not you) and pour over a glassful of cracked ice.
Garnish: a twist of lemon
Vodka, St. Germaine, Agave, Lemons, Limes & Limeaid
1/2 cup Dried Hibiscus Flowers
2 tablespoons Dried Lemon Peel
2 tablespoons Dried Orange Peel
2 tablespoons Dried Juniper Berries
1 tablespoons Dried Cardamon Seeds
Empty a 750 ml bottle of your favorite vodka into a container then add to container:
- Infusion ingredients
- 3 oz St. Germaine
- 2 tablespoons agave
- Juice from 1 lemon and 1 lime
- 2 tablespoons Limeaid
- 3 oz water
Let it soak for 20 minutes.
Strain all liquid in container through fine mesh strainer back into the bottle.
What's leftover, strain into two glasses of ice. Enjoy.
Put bottle in freezer for later.
Garnish: a lemon wedge
In a blender that blends really well, mix
a jigger of tequila
1/2 jigger triple sec
3/4 cup frozen strawberries
1 spoonful of Limeaid
a splash of water
Blend until ice is practically smooth and pour into deserving glass.
Salted rim optional.
Garnish: ripe strawberry

In a sturdy mixing glass with stainless shaker (or something you mix in and pour out of, muddle
1/2 wedge of sweet cantaloupe
a sprig or two of mint
a couple leaves of basil
with a jigger of Jameson Irish Whiskey
Add ice, shake vigorously and strain into a chilled glass.
Garnish: a sprig of rosemary
